Idiyaappam / Rice Noodles

One of my favorite dishes is Idiyaappam. My mom makes good sEvai/ santhakai. I love them a lot.. with both sugar coconut and tomato flavored. Since I dont have that santhakai stand., I started making idiyaappam with my murukku presser. Since the beginning I liked it a lot like my mom's santhakai.
People think that it is really a hard task to use presser to prepare noodles.. It is all depending upon the wright consistency of the mixture we use.

Ingredients:

Serves 3-4 persons.
Rice Flour - 4 cups
Water - 2 cups (May need more)
Salt - 2 pinch

Preparation:

  • Boil water. 
  • Sprinkle salt to the rice flour in a mixing bowl and mix.

  • Pour hot water one scoop at a time into the rice flour. Use a wooden spatula to mix water and make a fine soft dough. When hot water is poured into the flour, the heat partly cooks the flour.

  • When it is ok to handle, mix with your hand and the batter feels slightly sticky.


  • Using a murukku presses or a noodles maker, press it in small rounds in each idli dip of the idli plates.

  • Steam cook the noodles, just for 5 minutes.

  • Remove it from the plates and serve hot with kurma, coconut milk, or coconut chutney.



Chocolate chip Paniyaaram (Puff Dumpling) / Chocoate chip Rice Munchkin

My daughter loves chocolate flavored food items. Her anytime favorite is chocolate chip muffins.
Aaaha..... Here comes an idea. This evening I thought of making paniyaaram( Puff Dumpling). But she wanted her muffins. Since most of the muffins are made from all-purpose flour, and I just thought of trying this method to delight her with my paniyaaram in her favorite taste.

Ingredients:

Dosa batter - 1 cup (Click for preparation of Dosa Idli/batter)
Chocolate chips - few, like 2 -3 nos. in each paniyaaram is good.

Preparation:


  • Heat paniyaaram pan / puff dumpling pan, in medium heat, better the heat be in medium low.
  • Pour batter half way in each rounds.

  • I used a nonstick pan, which doesn't require oil. If not, pour a drop of oil on each dumplings(paniyaaram).
  • Add 2 to 3 chocolate chips in each paniyaaram.
  • Flip each one to cook for the other side.

  • Once cooked, serve when those are at room temperature. When served hot, the chocolate chips will be very hot and it may hurt our kids tongue.


Cheese Dosa

A pizza kind of dosa variety. Kids prefer to eat this dosa., because of cheese taste. For adults to make it much tastier, along with cheese, add some chopped green peppers.
It's always up to our imagination and taste to make some varieties in dosa.

Ingredients:

For making one dosa
Dosa batter - 1 scoop
Green chilli - 1 small size. finely chopped
Finely Shredded Cheddar - 2 - 3 tsp

Preparation:


  • Heat dosa griddle on a medium high heat. Pour a scoop of dosa batter. Just spread a little.
  • When one side is half way done, sprinkle some shredded cheese and finely chopped green chillies.

  • For more tastier, spread some marinara sauce. Again this is based on our taste. So some kind of green chutney can also be spread on dosa before spreading cheese.

  • Wait until one side is been done. Flip it over and serve with chutney, sambar.
